  • Heat oven to 375°F.
  • Mix first 4 ingredients in large bowl until well blended. Stir in 3/4 cup cheddar and 1/2 cup cracker crumbs.
  • Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining crumbs and Cheddar.
  • Bake 20 to 25 min. or until casserole is heated through and cheese is melted.

How to Thaw Frozen Spinach

Thaw frozen spinach in refrigerator overnight or unwrap; place in microwaveable bowl and thaw in microwave as directed on package. Be sure to squeeze well after thawing to remove as much water as possible.

Rated 1 out of 5 by from I thought this was dreadful. I thought this was dreadful. I will not be making this again. I feel like I wasted some good ingredients making a sub-par recipe. Although I was prepared for this dish to be on the drier, not so creamy side, I was not prepared for the combination of dry and bland. I am not going to waste time trying to tweak this one. It goes straight in the 'never make again' pile.

Rated 5 out of 5 by from My husband LOVES this casserole. My husband LOVES this casserole. It reheats great, but he doesn't mind eating it cold. I couldn't believe I could find a delicious recipe using ingredients that needed to be rescued (ranch dressing, tub cream cheese - and we ALWAYS have frozen spinach on hand). I even made it for Thanksgiving and it was gobbled down!!!

I love spinach and the ingredients sounded good with the exception of the ranch dressing, but I think the spinach got lost in this dish. I found it very heavy for a side dish and on the dry side. I would not make this dish again. Sorry.

It was very tasty but was also very rich. I think next time I will not put crackers on the top and will serve this as a spinach dip appetizer. I will make it again!

Everyone seemed to like it; however, it was too dry. I expected it to be creamy. I will only use crackers on the topping and I will use garlic and more milk.

I would not, however, call the consistency "creamy" it was more casserole-ish, meaning more cakey (as in bound together) than creamy.

I did substitute the Ritz crackers with French Fried Onions and was so happy with the way it turned out. Leftovers are great whisked in with an egg and scrambled!
