Crumb-Topped Salmon with Cucumber Salad

Crunchy, zesty and flavorful, a freshly made cucumber salad is the ideal accompaniment to cracker crumb-crusted salmon fillets.

What You Need

4
 skinless salmon fillets (1 lb.)

Tbsp.  lemon juice
1/4
cup  KRAFT Real Mayo Mayonnaise

Tbsp.  KRAFT Grated Parmesan Cheese
1/8
tsp.  ground red pepper (cayenne)
10
 round buttery crackers, crushed (about 1/2 cup)
1
cup  thinly sliced cucumbers
1/4
cup  thinly sliced red onions

Tbsp.  KRAFT Zesty Italian Dressing
1/2
tsp.  dill weed

Make It

HEAT oven to 400°F.

PLACE fish in 13x9-inch baking dish; drizzle with lemon juice. Mix mayo, cheese and red pepper; spread over fish. Sprinkle with cracker crumbs.

BAKE 12 to 14 min. or until fish flakes easily with fork. Meanwhile, combine remaining ingredients.

SERVE fish with vegetable mixture.

How to Score a Cucumber
Stand the unpeeled cucumber on end. Using a fork, scrape the peel from top to bottom to create lines in remaining peel, continuing around entire cucumber. When sliced, the cucumber will have a decorative frilled edge.
