  • Mix dressing and curry powder in large bowl until well blended.
  • Add all remaining ingredients except peanuts; toss to coat. Cover.
  • Refrigerate several hours or until chilled. Stir in peanuts just before serving.

Storage Know-How

Store apples in plastic bags in the refrigerator for up to 1 month. Discard any bruised apples since they give off ethylene gas which causes the apples around them to spoil more quickly.

Rated 5 out of 5 by from Now a weekly staple in our house. Now a weekly staple in our house. Much better than regular cole slaw. I usually leave out the peanuts for the sake of saving calories. It is so good they are not necessary. Sometimes I leave out the curry and add vinegar for variety. You can also add raisins. I don't add onions. It stays fresher that way.
