what you need

1
can (14-1/2 oz.) vegetable broth
1
medium red onion, chopped
1/2
cup sliced dried apricots
1
Tbsp. olive oil
1
pkg. (10 oz.) couscous
1
pkg. (2.25 oz.) PLANTERS Sliced Almonds, toasted
2
Tbsp. chopped fresh mint leaves

Make It

COMBINE broth, onions, apricots and oil in medium saucepan. Bring to boil on medium-high heat.

STIR in couscous; cover. Remove from heat; let stand 5 min. Fluff couscous with fork.

ADD almonds and mint; mix lightly.

Substitute chicken broth for the vegetable broth.
