  • Stir in couscous; cover. Remove from heat; let stand 5 min. Fluff couscous with fork.
  • Add almonds and mint; mix lightly.

Substitute chicken broth for the vegetable broth.

All of the ingredients really compliment eachother well. I served this with pineapple pork and sugar snap peas. I felt like I was dining in the caribbean! Will make again.

Rated 4 out of 5 by from I loved it. I loved it. I keep trying different recipes to get my husband to like couscous, and this didn't do the trick. BUT I love couscous and this was a great recipe. We didn't have dried apricots, so used a dried fruit medley and it was fantastic.

I didn't have apricots so I used mandrin oranges, which still tasted fine - it was the mint that was weird. I didn't think it went very well with the dish. I'll make this one again, without the mint.
