This main-dish salad provides 1-1/2 cups of the recommended 2-1/2 cups of vegetables per day.
Substitute 1 cup chopped cooked chicken for the packaged chicken breast.
Substitute PLANTERS Sliced Almonds or PLANTERS COCKTAIL Peanuts for the cashews.
All the colorful vegetables give this low-calorie main-dish salad a lot of crunch. The peppers are rich in vitamin C and team up with the carrots for an excellent source of vitamin A.

I make this ALL the time as a side dish. (It's fantastic with burgers!) I typically just use 1 pkg of broccoli slaw, a handful of cashews, and about 1/4 cup dressing. It's great with all of the ingredients as well, but I like my life simple. This mini version keeps better the next day, as well.
I've been making this since it forst appeared in the magazine. My family loves it! I substitute mandarin oranges for pineapple and, when I don't have cashews, I use slivered almonds.
