The first time I made this recipe, I used the packaged chicken and it turned out pretty well. The second time I made it, I used roasted chicken from the grocery store, and by the time I went to eat it in my lunch the next day, the chicken pieces were all soggy and mushy. I don't know what happened to it, but I was really bummed because I figured fresh chicken would make it better, not worse.

Could not find broccoli slaw, used a pre packed slaw made of broccoli, carrots & red cabbage. I think it worked well. Some people were not fond of the pineapple, but I loved it. I also let people add their own cashews and dressing. The left overs (dressing on the side) made a wonderful lunch the next day as well. Would be great to take to a picnic of pot luck. Very flavorful.

Rated 5 out of 5 by from I love sweet and salty! I love sweet and salty! I used a rotisserie chicken from the deli, it added a lovely layer of flavor! I always add the cashews once the salad's plated, then, lefterovers get fresh crunchy cashews. I also open a large can of pineapple tidbits and toss the rest into jello for dessert. Paired with some garlic bread, this is a complete dinner and a big hit.

Rated 4 out of 5 by from Loved the recipe as well. Loved the recipe as well. I would say that this serves WAY more than 4. I brought a batch to a pot luck reunion and had salad left for a week! If you anticipate not eating it all at once, add the cashews only as you eat it since they get soft when they sit with the salad overnight. I too added more pineapple.

Rated 5 out of 5 by from Very good! Very good! Great on a hot summer day, for lunch or dinner. I added a can of mandarin oranges (drained) and used chopped almonds instead of cashews. Might want to sub a low-cal dressing for the poppyseed if you're counting calories (lowfat catalina or Italian would be good). Tastes even better the second day!!

I added more pineapple, chicken and cashews than it called for which made it a very filling salad. It's a perfect summer dish and great for potlucks. I've shared this recipe with many people and everyone has raved about it. It's a must try!

Rated 4 out of 5 by from this was very good. this was very good. used only 1 bag of broccoli slaw, and 2 bags of the chicken. also, substituted crushed pinapple, because it was on hand. it was great in a pita also! took the advice to not add cashews- i let everyone add their own- had lots leftover, so i was glad i didn't add them. will make again!

This recipe would be perfect for a hot summer day, very refreshing. The only change I did was added grilled chicken tenders that I seasoned with steak seasoning, and served it with some grilled naan bread. Perfect, can't wait to make it again.
