Rated 5 out of 5 by from Delicious and Easy Indeed! I made this last night for dinner and it was fantastic! Hearty enough to be a meal on its own with the beans and corn. I even forgot the cheese (don't ask me how, because we love cheese) and it was still great! Simple ingredients and came together quickly. I did let it set for a few minutes to help "soften" the slaw, just as you would with cole slaw (but not nearly as long). Would highly recommend!

Rated 5 out of 5 by from Family and School Hit I have made this recipe several times both for my family and school appreciation luncheons. Everyone loves it. Every time my son sees a package of coleslaw mix in the cart he asks if I'm making this. I don't like Ranch ( I know some people feels that unAmerican.) so I substituted Avocado Ranch and it makes the flavors even better. I also use the whole can of beans and bag of corn. I usually double the sauce and since I make it the night before the Ramen soak up the excess.

Rated 5 out of 5 by from Easy and delicious! Big hit at my Mexican-themed dinner party! Unlike some other reviewers, I did use the hot sauce, and it had a little kick but was not too spicy. I used a whole can of black beans and 12-oz package of frozen corn because I didn't want leftover ingredients. Otherwise, I followed the recipe exactly. Super easy and yummy!
