  • Heat oven to 350ºF.
  • Cook bacon in large skillet until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels. Crumble bacon; reserve for later use. Add mushrooms and onions to reserved drippings; cook and stir 2 min. or until onions are tender and mushroom juices have cooked off. Remove from heat. Stir in bacon.
  • Meanwhile, microwave Neufchatel in large microwaveable bowl on HIGH 30 to 40 sec. or until softened; whisk until creamy. Gradually add milk, about 1/4 cup at a time, whisking after each addition until blended. Whisk in eggs. Pour into 13x9-inch baking dish sprayed with cooking spray; top with vegetable mixture and cheese. Cover with foil.
  • Bake 45 to 50 min. or until knife inserted in center comes out clean, uncovering after 30 min. Remove from oven. Let stand 10 min. before serving.
