I lost this recipe and found it to make again. It is really delicious and a great low carb alternative for breakfast or lunch.
My Husband likes to have this for breakfast. I keep it in the fridge and he warms up a slice in the microwave. It's good with other vegetables too like green beans, or broccoli but you need to cook them a little bit first. Canadian bacon is good and low in fat too if you can't find the boca links. I make this often.
So good that when I brought it out of the oven I seriously thought of hiding it and eating the whole thing myself :-) Totally yummy
