  • Blend 1 can of beans and half the broth in blender until smooth. Cook and stir onions, garlic and cumin in hot oil in large saucepan on medium heat 3 min. Add bean puree; mix well.
  • Add second can of beans and broth to blender; blend until smooth. Add to bean mixture in saucepan with remaining can of beans and salsa; mix well. Bring to boil on medium-high heat; simmer on low heat 15 min., stirring occasionally.
  • Serve topped with sour cream.

Substitute

Top each serving with 2 Tbsp. KRAFT Shredded Cheddar Cheese instead of the sour cream.

Rated 5 out of 5 by from This soup was wonderful! This soup was wonderful! I have made this twice now. Once when my parents came into town. I wanted a quick and easy meal for when we got home from picking them up at the airport. I was able to make this in the early afternoon and paired it with quesadillas. The second time I made this was a few weeks later for my neighbors after her father passed away. The whole family loved it including her two teenage kids. I was worried since the looks of this soup is pretty "intense", but the flavor is just wonderful.

Rated 4 out of 5 by from I did a few things different and I think it made the prep easier with the same result. I did a few things different and I think it made the prep easier with the same result. After I sauteed the veggies I just added the stock, salsa and drained and rinsed beans. I let them cook a few minutes and instead of blending different cans of beans I just used a potato ricer and mashed throughout the soup. It still thickened up really nicely and we really liked the chunky texture. This is definetly a new family fav. I will make this one again and again. It was so fast and simple.

Rated 4 out of 5 by from This was a really good, EASY soup to make. This was a really good, EASY soup to make. The flavor intensifies if made ealier in the day or even the day before. It's yummy with cornbread! In addition to having made this several times at home, I've served this at a party as a back up option for people with dairy issues. It was very well received and the recipe was asked for more than once. If you like black beans and like soup, give this one a try!

From past experience, I have found that soups always taste better the day after they are made - this was no exception. I sampled some before overnight refridgeration . . . very good, but the next day - EXCELLENT! It was delicious topped with cheddar cheese, sour cream and crushed tortilla chips.

Rated 5 out of 5 by from Absolutely delicious! Absolutely delicious! I used Safeway brand southwest salsa made with black beans and corn. It complemented the soup very nicely. I also added a pinch of crushed red pepper(I like it hot). Skipped the oil to cut calories, and used fat free chicken broth. Turned out wonderful!

I made this recipe to bring to work with me for lunch, but I did ofcourse have a taste test this weekend when I made it. It was wonderful. I added just a tad of fat free sour cream to it. I will be making this recipe again and again. Even my husband loved it!!

I do make a few changes though: omit the garlic, add one chopped green bell pepper (which I saute with the onion and cumin), and add 1 package of smoked beef sausage. The result is a very hearty, yummy soup!

Since I am cuban it is easy to see that this recipe is far from Cuban.....if anything it should be called Mexican black bean soup. Cubans do not use salsa or sour cream in recipes...ever! This may be tasty but it is NOT cuban.
