Here's a chicken breast sandwich with a decidedly Greek appeal, thanks to a dressing of crushed mint, tangy yogurt and fresh cucumber.
finely chopped cucumber
teaspoon dried dill weed
teaspoon dried mint leaves, crushed
pita bread rounds
ounces thinly sliced fully cooked chicken breast
tomato, thinly sliced
crumbled feta cheese
1. For dressing, in a small mixing bowl stir together yogurt, cucumber, dillweed, and mint. Set aside.
2. For each sandwich, place a pita bread round on a plate. Top with lettuce, chicken, tomato, and feta cheese. Spoon dressing on top. Roll up the pita bread. Secure with wooden toothpicks. Serve immediately. Makes 4 servings.
Prepare dressing; cover and chill up to 6 hours.
