Scrub the cucumber well, then cut in half lengthwise. Remove and discard the seeds. Then, shred cucumber with a hand shredder or food processor. Do not peel the cucumber before shredding since the shredded peel will add a nice green color to the finished recipe.

My dip was very soggy and wet. Not sure where all the liquid came from. I drained the water off several times, and still very runny. Did not taste well, not sure what I did wrong.
This was sooo easy and my friends loved it! I will make it again and again. I served it as a dip with crackers beside it, instead of on top of the crackers and it worked out wonderfully! It's the most requested snack recipe I have!
