They look beautiful and taste great. To cut down on the messiness of getting the cream cheese in, try this: Mix the cream cheese with some sour cream...about a 1/4 cup. You don't want it too runny, but a little less firm. Then use an icing bag with tip. It makes them look even better and is much easier!

I replaced the smoked salmon with bacon peices. Everyone loved these, they were so good! I couldn't find seedless cucumbers to I used normal ones and scooped out the seeds. Even those who don't normally like smoked salmon enjoyed this. The flavors go together really well. It was easy to make, a little time consuming scooping out the cucumbers but well worth it. The presentation is very nice too!

Rated 4 out of 5 by from Well, 1st off, I'm a guy and I made it with 3 cucumbers for a party. Well, 1st off, I'm a guy and I made it with 3 cucumbers for a party. My wife and daughter immediately said "Cute!" They are clunky and it's hard as heck to keep the cream cheese in while you jam in the fish hunks and the little dill sprigs. Very messy. But most liked them.

Rated 4 out of 5 by from My family really liked these. My family really liked these. I did omit the salmon and used a piece of cooked bacon in its place because we don't like salmon. I used fresh chives to garnish rather then the dill. Next time I am going to try crabmeat in place of the salmon.

I used a melon baller to remove the center, which also removed the seeds. I also added a spoonful of sour cream to the recipe.
