  • Spoon 2 tsp. of the mixture onto each cracker just before serving.


Substitute golden raisins for the dried apricots. If raisins are large, chop them before using.

    This is delicious and easy. I added a little extra curry powder and pepper as I like my curry to have a little "heat." Works equally well as a spread or the filling for little finger sandwiches.

    I also substituted the golden raisins for the apricots. This was a great chicken salad. It's definately different, and not something I'd want everyday, but it was nice for a change!

    This is a super easy recipe. I made it even easier by using canned chicken and doing as suggested by substituting golden raisins for the apricots. Its very tasty, and I've had several requests for the recipe. You might need to add a bit more curry powder than suggested.
