  • Cook potatoes in boiling water in large saucepan 15 min. or until tender.
  • Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add onions; cook and stir 4 min. Stir in curry powder; cook 2 min., stirring frequently.
  • Drain potatoes. Add onion mixture, sour cream and salt; mash until smooth.

Rated 3 out of 5 by from Very unique! Very unique! I ended up only using 3/4 of the the very large onion I had, and I used 3 heaping tablespoons of the curry powder...and I would still recommend a little more! This dish definitely needs salt. I would make this again.

Rated 4 out of 5 by from I would add a little more curry to this recipe. I would add a little more curry to this recipe. I also made this recipe adding sliced apples. Layer the cooked, mashed sweet potatoes with slices of apples in a casserole dish and bake.
