What You Need

1-1/2

lb. sweet potatoes (about 3), peeled, quartered

Tbsp. oil

onion, finely chopped

tsp. curry powder

1/2

cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

1/2

tsp. salt

Make It

COOK potatoes in boiling water in large saucepan 15 min. or until tender.

MEANWHILE, heat oil in large nonstick skillet on medium-high heat. Add onions; cook and stir 4 min. Stir in curry powder; cook 2 min., stirring frequently.

DRAIN potatoes. Add onion mixture, sour cream and salt; mash until smooth.

I substituted Plain Greek yogurt for the sour cream and added 2 tbsp of butter. It was a nice change from the typical super sweet sweet potatos

I was very surprised at how good this recipe turned out. My husband and I enjoyed this very much. It was a nice change from regular mashed potatoes.

I made this twice. The first time I forgot the salt and it was a bit flat. I steamed the potatoes instead of boiling them and used only half an onion each time. Very tasty.

Very unique! I ended up only using 3/4 of the the very large onion I had, and I used 3 heaping tablespoons of the curry powder...and I would still recommend a little more! This dish definitely needs salt. I would make this again.

My medium onion was very strong and mostly the dish tasted like onion. I will be making again and trying a little less onion becuase over all it was a super tasty recipe

This is such a great recipe! I used fat free sour cream and no one could taste the difference. Mild flavour and creamy texture. Everyone asked for more!

I would add a little more curry to this recipe. I also made this recipe adding sliced apples. Layer the cooked, mashed sweet potatoes with slices of apples in a casserole dish and bake.
