  • Cook potatoes in boiling water in large saucepan 15 min. or until tender.
  • Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add onions; cook and stir 4 min. Stir in curry powder; cook 2 min., stirring frequently.
  • Drain potatoes. Add onion mixture, sour cream and salt; mash until smooth.

    I substituted Plain Greek yogurt for the sour cream and added 2 tbsp of butter. It was a nice change from the typical super sweet sweet potatos

    I was very surprised at how good this recipe turned out. My husband and I enjoyed this very much. It was a nice change from regular mashed potatoes.

    I made this twice. The first time I forgot the salt and it was a bit flat. I steamed the potatoes instead of boiling them and used only half an onion each time. Very tasty.
