  • Melt butter in large saucepan on medium-high heat. Add onion; cook and stir 4 minutes or until onion is tender.
  • Add broth, quinoa, raisins and curry powder; stir. Bring to boil. Reduce heat to medium-low; simmer 20 minutes or until broth is absorbed.
  • Stir in carrots and almonds; cover. Let stand 5 minutes before serving.

How to Toast Quinoa

Toasting adds a deeper flavor and crunchier texture to quinoa. After rinsing quinoa, drain well. Heat a large nonstick skillet on medium-high heat. Add drained quinoa. Cook until quinoa dries out and becomes golden brown, stirring frequently. Remove from heat. Transfer to bowl and continue as directed.

Cover and refrigerate any leftovers up to 4 days.

Rated 5 out of 5 by from This was delicious! This was delicious! Quinoa is a really healthy food, so I'm trying to eat more of it. I did not rinse it, it is so small it fell through every strainer I have. It tasted just fine without the rinsing. The other thing I did differently was I added in the carrot at the same time as the onion so it was cooked through. This was a really delicious side dish. Will make this on a regular basis.

Rated 5 out of 5 by from This was an excellent recipe. This was an excellent recipe. I used a little more curry powder, raisins and almonds than called for, but this was just personal taste. The flavors were excellent and completed the lentil burgers I served this with. The dish was nutty flavored but with sweetness from the carrots and raisins. I will definitely be making this again and may serve it with some yogurt next time around.

Rated 5 out of 5 by from I made this dish and loved it..... I made this dish and loved it..... Very nice flavor, very Great texture, but I didn't add the raisins or almonds and I subbed the grated carrots with peas & carrots. I also add some parsley. Again.... A very (TASTY) dish ;-)
