  • Melt 2 Tbsp. butter in large saucepan on medium heat. Add potatoes and onions; cook 10 min. or until potatoes are tender, stirring frequently. Stir in garlic; cook 1 min. or until fragrant, stirring frequently. Gradually add spinach, cooking and stirring after each addition just until spinach is wilted.
  • Add half the spinach mixture to food processor or blender; process until smooth. Spoon into bowl. Repeat with remaining spinach mixture; add to cooked spinach in bowl.
  • Melt remaining butter in same saucepan. Add flour and curry powder; cook and stir 2 min. Gradually add broth, whisking constantly after each addition. Add lemon juice and spinach mixture; cook and stir 2 to 3 min. or until slightly thickened.
  • Spoon sour cream into medium bowl. Stir in 1 cup of the hot soup until blended. Return to remaining soup in pan; mix well. Cook and stir 1 to 2 min. or until heated through. (Do not let soup come to boil.)
  • Serve topped with croutons.
