  • Add boiling water to combined gelatin mix and lemon zest in large bowl; stir 2 min. until gelatin is completely dissolved. Add enough ice to apple juice to measure 1-3/4 cups. Stir into gelatin until slightly thickened. Whisk in COOL WHIP.
  • Blend raspberries in blender until smooth; spoon half evenly into 10 dessert dishes. Top with gelatin mixture and remaining raspberry sauce.
  • Refrigerate 4 hours or until firm.

Substitute

Prepare using 2 pkg. (0.3 oz. each) JELL-O Lemon Flavor Sugar Free Gelatin.

Variation

Substitute orange juice for the apple juice, and frozen strawberries for the raspberries.

This was quite refreshing and the raspberry sauce was the perfect compliment. I added 2 tablespoons of sugar and a tablespoon of lemon to my raspberry puree. I also try to strain out the seeds but darn it, some of them made it through. No big deal. It was a hit. Although I cannot say it was what I called mousse. The mousse I know is light and fluffy and this was firm. Still good and I would recommend this. Perfect for Spring!

I made this last night for dessert, it was so easy and everyone, including my husband loved it!! I used 12 oz of raspberries and did not have enough to put on top, so I will use even more next time. I also added 1/2 c. sugar to the raspberries, it was a little to sweet for my liking but my family said it was perfect. Will be making this again soon!!

Mine didn't gel all the way, even after sitting in the fridge overnight.:( Would have been delicious if it worked out right. I followed the recipe to the "T"...still wasn't right though:( hope you have better luck than me!

Rated 3 out of 5 by from Was abit time consuming. Was abit time consuming. I used strawberries instead. I read ratings and added abit more sugar to berries. Something different. This was very good and would be refreshing dessert on a hot summer day. I will make it again.
