Garnish frosted cake with carrot curls and a light sprinkle of additional ground cinnamon before serving. To make carrot curls, cut a cleaned carrot into lengthwise strips with vegetable peeler. Twirl strips into curls, then insert toothpick into each to secure. Place in ice water; let stand several hours. Remove and discard toothpicks before using curls to garnish cake.
Keep frosted cake refrigerated.
