  • Heat oven to 400ºF.
  • Cook Macaroni in large saucepan as directed on package; drain. Do not return macaroni to pan.
  • Melt butter in same saucepan on medium heat. Whisk in flour; cook and stir 1 min. Gradually stir in milk; cook 1 to 2 min. or until thickened, stirring frequently. Add Cheese Sauce; cook and stir on low heat 1 to 2 min. or until blended. Remove from heat.
  • Add macaroni, egg, sour cream and 3/4 cup shredded cheese; mix well. Spoon into 12 muffin pan cups sprayed with cooking spray; sprinkle with remaining shredded cheese.
  • Bake 13 to 15 min. or until golden brown. Cool 5 min. before removing from pan to serve.

    I used leftover Mac and Cheese (just the regular kind), mixed with sour ***** and the shredded cheese suggested. I didn't use an egg, but I sliced ham (just regular deli meat ham) and put it inside the macaroni and cheese. I then spooned it into the muffin pan and put bacon bits on top and baked. Tasted super delicious (and was a good use for day old mac n cheese! I gave only three hearts because I feel like the recipe wasn't really much without the added ingredients that I listed.

    Made these for my kiddos, they love mac & cheese to being with. However mine didn't turn out as "mini muffins" they didn't hold together, then I realized I didn't add a touch of Philadelphia. I take it that's what holds it together. Now I know for next time :) I, myself am not a mac & cheese fan but this is actually pretty good! No doubt the kiddos will love it tonight!
