Fantastic! I did as the reviews suggested and halved the amount of dijon mustard. Still, it was fresh, light (for risotto, that's something!) and very tasty. I will surely make again, and am thankful for a recipe using zucchini that is flavorful and different.
This recipe was ok. If there wasn't so much dijon mustard it would be fabulous.
