  • Preheat oven to 375°F. Mix meat, barbecue sauce, bread crumbs and egg. Shape into loaf in 12x8-inch baking dish.
  • Bake 55 minutes. Meanwhile, bring water to boil in medium saucepan. Add milk, butter and salt; stir in potato flakes. Add cream cheese; stir until completely melted.
  • Spread potato mixture over meatloaf; top with Singles. Bake an additional 5 minutes or until Singles begin to melt.

Serving Suggestion

Serve with a steamed green vegetable, such as green beans, and a whole wheat roll.

Substitute

Substitute ground turkey for the ground beef.

Special Extra

Garnish with chopped fresh chives just before serving.

    I started making this over 7 years ago. I have to make a double recipe every time. It's one of my most requested recipes to make when I have guests over. This is a no fail recipe. I make the meat mixture up before I go to work and let it set all day in the fridge. When I get home I finish off the recipe. That's the best way or make it before bed and reheat it the oven and add mashed potatoes. It's always better the next day.
