Rated 5 out of 5 by from This is delicious! This is delicious! We used smoked chicken, from our local grocery, and frozen corn thawed in water. We mixed all the ingredients, except cheese, together and layered in the tortilla with cheese on both sides. After all, it is a qesadilla. We then grilled it on the George Foreman for about 3 min. We served with a ceasar salad. For leftovers, store the mixture separately in the refrigerator, layer with cheese in tortillas, and grill just before serving. Without smoked chicken, this might be good with taco seasoning or cumin, celantro, and/or lime juice.

Rated 4 out of 5 by from Once again another hit from Kraft. Once again another hit from Kraft. I really enjoyed this. I did a few thing differently however. Instead of putting salsa in the quesadilla I added a Zesty Ranch Taco sauce that I found in the grocery store...I also added a Taco Bell Taco Seasoning Pack to season the meat and veggies. This gave it a little spice and extra flavor! Green peppers and onion were also added! Veeeeeeeeeeeery good! My bf and I loved it...will definitely make this again!

Rated 5 out of 5 by from I've made this recipe several times and it's simply delicious and easy! I've made this recipe several times and it's simply delicious and easy!! I use pre-cooked fajita chicken to save on time and I also add spanish rice to the quesadillas themselves. Lots of cheese helps hold them together. However, I don't cook them in the skillet...I use the George Foreman grill. This takes away the flipping part and grills evenly on both sides! If you have one, I strongly suggest using that instead of the skillet. Enjoy!!

Taking the advice of another rater, I added jalepenos and then I also added a can of green chilies. This was a great meal and a hit with my entire family. My picky daughter even ate the quesadilla with just cheese. This was a very quick meal and since I used leftover chicken from a previous night dinner, it took no time at all. We are actually having it again tonight.

These were delicious! i don't like black beans so i didn't add those, i did buy precooked southwestern chicken strips and just finely chopped them, i used olive oil to cook these and the tortilla's came out crisp and yummy, doing these on the george foreman gets messy and the tortilla's don't have that yummy cooked taste, husband loved these! will make again!

I seasoned the chicken when I baked it with a chiptole rub, onions, garlic, white pepper, and smoked paprika. Than I tor apart the chicken added the beans, onions, and corn and some more garlic. Warmed it up for awhile. Than put them together. I used a mexican blend cheese and also choped up some jalpeno's and put them in also!! Awesome!!

In regards to the previous comment, this recipe is 500 calories per serving and one serving is two quesadillas. So if you ate 3 quesadillas, you had 750 calories, not 1500. Right? Thought that might make everyone feel better. Anyway, I have not yet made this, but it looks and sounds delicious. Not to mention, super easy to make!!

Rated 5 out of 5 by from Made these quesadillas for dinner....was a huge hit! Made these quesadillas for dinner....was a huge hit!! They were so easy to make and clean-up was a breeze. I started with a rotisserie chicken and added ingredients from there. We topped with sour cream & salsa and made a side order of spanish rice. This is a definite DO-OVER and will be added to our monthly menu.
