  • Whisk eggs and milk in large bowl until well blended. Stir in bread. Add spinach, bacon and 1-1/2 cups cheese; mix lightly.
  • Pour into 13x9-inch baking dish sprayed with cooking spray; top with remaining cheese. Cover; refrigerate overnight.
  • Heat oven to 350ºF. Bake, uncovered, 48 to 50 min. or until top is puffed and golden brown.

    This recipe was perfect for Christmas brunch! I put it together the night before so it was ready and baked while we opened presents Christmas morning. It was easy to make and tasted delicious. The leftovers were even better. I forgot to put the extra cheese on top and it still tasted very good.

    This was so quick to put together and then just bake up on Christmas morning. Everyone enjoyed it...even the small kids. I was concerned because it didn't call for any salt but it was perfect since the bacon and the cheese have plenty of salt.
