Flaked coconut, dark brown sugar and a hint of cinnamon and nutmeg give this easy corn bread recipe its Dominican-style flavor.

What You Need

cup  yellow cornmeal
1/2
cup  flour
1/2
cup  BAKER'S ANGEL FLAKE Coconut
3
Tbsp.  dark brown sugar
2
tsp.  CALUMET Baking Powder
1/2
tsp.  salt
1/2
cup  milk
1/2
cup  raisins
1
 egg, beaten
1
tsp.  ground cinnamon
1
tsp.  freshly grated nutmeg

Make It

HEAT oven to 425°F.

MIX first 6 ingredients in large bowl. Stir in remaining ingredients until well blended.

POUR into 9-inch pie plate sprayed with cooking spray.

BAKE 15 min. or until lightly browned.

Substitute
Substitute canned unsweetened coconut milk for the 2% milk.
Special Extra
For a crisper more golden crust, bake in well-greased preheated cast iron skillet.
Substitute
Substitute 1/2 tsp. ground nutmeg for the freshly grated nutmeg.
