  • Heat oven to 350°F.
  • Cut potatoes in half lengthwise. Scoop out centers, leaving 1/8-inch-thick shells. Mash potatoes in medium bowl. Add 1/2 cup butter, juice, sugar and ginger; beat until fluffy.
  • Spoon into shells. Mix remaining ingredients; spoon over potatoes.
  • Bake 20 to 25 min. or until heated through.

Prepare as directed, substituting 1 drained 11-oz. can mandarin oranges and 1/3 cup whole berry cranberry sauce for the marshmallows, coconut and 1 Tbsp. butter.

    This recipe became an instant favorite! Used 1/4 tsp cinnamon and 1/4 tsp ginger. I served them with 2 topping choices: the marshmallow/coconut mixture and the other half with marshmallow/pecan. Even those who do not like sweet potatoes loved them.
