  • Arrange cake slices in single layer on bottom of 13x9-inch pan, cutting as necessary to fit. Drizzle with juice cocktail; top with raspberries, separating berries as needed to form even layer. Sprinkle with sugar.
  • Beat pudding mixes and milk in large bowl with whisk 2 min. Stir in 1 cup COOL WHIP; pour over raspberries. Carefully spread remaining COOL WHIP over top of dessert.
  • Refrigerate several hours or until chilled.

Prepare recipe as directed, using JELL-O Lemon Flavor Instant Pudding, substituting orange juice for the cranberry juice cocktail, and substituting 4 cups of your favorite seasonal fresh berries, such as sliced strawberries, raspberries and/or blueberries, for the frozen raspberries.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

I used 4 cups of strawberries and oj instead of cranberry juice and raspberries and it was good, but not great. I think if I would make again, I would sprinkle the sugar on the strawberries first and let the natural juices come out first. It might give it more flavor. Also, I would use a smaller dish or larger cake in order to have bigger slices of cake in the dessert.

Rated 5 out of 5 by from Excellent! Excellent! The only thing that I did different was that I didn't use the juice. Instead, I used a container of frozen strawberries in syrup. It was DELICIOUS!! My whole family (in-laws included) loved it!
