  • Preheat oven to 350 degrees F.
  • In a large bowl, combine sugar, oil, eggs and vanilla. Beat with an electric mixer until smooth and well blended.
  • In a separate bowl, whisk together flour, cocoa powder, salt and baking soda.
  • Add the flour mixture to the sugar-oil mixture. Beat on low speed until just combined.
  • Spoon the batter evenly into 15 paper-lined muffin cups.
  • Bake for 18-22 minutes, or until muffin tops spring slightly when touched. Let cool in the pan for 10 minutes before removing. While they cool, dot muffin tops with chocolate chips, if you desire!
  • Enjoy!

Rated 4 out of 5 by from Tasty but missing a few key things in the method. THE ZUCCHINI! Followed the recipe as specified, but they fail to add in the zucchini to the actual method of the recipe. I added mine into the batter at the end. Also…a medium zucchini is very vague. This recipe needs to specify in cups. I'm very proficient in the baking department, so I had a general idea. I used 2 cups of finely grated zucchini. I grated it onto a large piece of parchment paper, then squeezed the liquid out of the 2 cups after grating. Leaving the liquid in would change the structure of the muffin batter. I also added in 1 cup of chocolate chips to the batter, no on top. They turned out wonderful and my family devoured them. The recipe made 20 large muffins not 15 as stated in recipe.
