  • Mix flour, sugar and baking powder in large bowl. Mix cereal and milk in medium bowl; let stand 3 minutes. Add egg, orange juice and oil; mix well. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Gently stir in cranberries.
  • Pour into greased 9x5-inch loaf pan.
  • Bake at 375°F for 50 minutes to 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan. Cool completely on wire rack.

For easier slicing, wrap cooled loaf of bread and store overnight before slicing the next day.

    Used Great Grains With pecans instead of the flakes---and Splenda instead of some of the sugar--Was great!!

    This was a very good bread. I used whole wheat flour so it was a little heavy, but it was still quite tasty.

    My hubby doesn't even like cranberries but he still loved the bread. The cranberries aren't overpowering. I used dried sweetened cranberries and it made a nice breakfast bread with tea.
