  • Heat oven to 350ºF.
  • Melt butter in large saucepan on low heat. Remove half of butter; mix with bread crumbs. Set aside. Stir flour and salt into remaining butter in saucepan; cook and stir 1 min. Gradually stir in milk until well blended; cook and stir until thickened. Add VELVEETA and 1-1/2 cups cheddar; cook until melted, stirring frequently. Stir in macaroni.
  • Spoon into 1-1/2-qt. casserole; top with remaining Cheddar and buttered crumbs.
  • Bake 20 min. or until heated through.

Make Ahead

Assemble recipe as directed. Refrigerate up to 24 hours. When ready to serve, bake at 350°F for 30 min. or until heated through.

Rated 4 out of 5 by from This was a great recipe! This was a great recipe! My husband loves mac and cheese, and I have been looking for a good homeade and low fat recipe. I used 12 oz. of the light Velveeta and only 1 tbl. of light margarine, so I took off some extra fat from the butter. I also used 1% milk instead of fat-free. I sprinkled it with just a little regular cheddar for sharpness. It tastes even better the a few days after it is made! Will make again!

I've made this mac 'n cheese for picnics (recipe doubles well - cook in 9 X 13 pan) and at home for dinner. I use less butter (only 1 tbsp), but use light or regular cheddar cheese (not fat free). Using these alterations I've been told I make the best mac 'n cheese people have ever had and am frequently asked for the recipe.

I made this one weekend when I wanted homemade macaroni and cheese but didn't want to ruin a week of healthy eating. It was absolutely wonderful; I had to put it up before my husband ate all of it! Excellent recipe. I did divide the servings in half since I had other things to go with it.

I did use a little more Velveeta than called for and I did not add the breadcrumb topping. I think next time I'll add a little more macaroni too. Otherwise great dish!!!

This recipe sounds really superb, however; it has more calories in it than my origanal one does because I do not use flour or bread crumbs, but I really like the idea of using Velveeta lite and kraft non fat cheddar so I will try it from that angle.

The recipe was very good, and the fat is reduced from what it would be if you didn't use light cheese or fat free milk. However, it still has quite a lot of fat and calories and isn't really good for anyone trying to watch their figure.

Rated 3 out of 5 by from I thought this said "reduced fat" Mac-n-cheese? I thought this said "reduced fat" Mac-n-cheese? Don't fool yourself....if it has velveeta in it at all, it is NOT low in fat. Just thought I would point it out. I have no doubt this recipe is good. It just isn't low fat.
