  • Heat 1/4 cup of the dressing in large skillet on medium heat. Add chicken; cook until chicken is browned on both sides. Remove from skillet.
  • Add the remaining 1/2 cup dressing, the onion, tomatoes, peppers and garlic to skillet; cook until crisp-tender, stirring frequently. Stir in beer; bring to boil. Return chicken to skillet. Reduce heat to medium-low; cover. Simmer 20 to 25 min. or until chicken is cooked through.
  • Serve chicken over the rice; top with vegetable mixture.

I substituted pepperoncinis for the jalapeno - they added some heat with a mild pepper flavor and a touch of vinegar, a perfect compliment to the chicken. Using a good beer is important, probably best to go with a sweeter beer that's not bitter. I used Sam Adams' Brown Ale and it added an excellent flavor and just a touch of sweetness. My boyfriend loved this dish - can't wait to make it again!

Hands down the best recipe I've had from this site, everyone in the family loves it, I have to double the recipe so everyone can be sure to have seconds. We substitute a Tequiza for the Amber beer and serve it over spaghetti noodles instead of rice. I think these changes really enhance the flavor and the pasta is a better complement to the chicken and veggie texture.

Some one used all the KRAFT Zesty Italian Dressing the night before, so I substituted red cooking wine for the initial simmer. Big mistake, not in taste, but the wine turned the chicken breast into what looked like a dark meat thigh.

Rated 5 out of 5 by from This was sooooo good. This was sooooo good. I didn't have any jalapeno's so I used 1/2 cup of homemade salsa that had lots of garlic. I also added the cooked brown rice directly into the pan a few minutes before serving. Quick and easy!

Rated 4 out of 5 by from Very good. Very good. Chicken was moist with lots of flavor. Mine doesn't look like the picture though, my chicken is much lighter colored and I have a much thinner broth. Think I'll put less beer in next time.

Rated 2 out of 5 by from Almost too spicy to eat. Almost too spicy to eat. Whole family had to forgo the sauce because there was too much heat. Next time I will make this without the jalepeno or only use half of one.
