Always use a thermometer to see if chicken is cooked through. The internal temperature should register at least 165ºF. When the chicken is completely cooked, the juices should run clear.
Packaged fresh chicken should be refrigerated in the coldest part of the refrigerator. Freeze uncooked chicken if it is not to be used within 2 days. If properly packaged, frozen chicken will maintain top quality in a home freezer for up to 6 months.
Save future kitchen time by stocking your freezer with containers of chopped cooked chicken. Cook boneless skinless chicken breasts or other chicken pieces in simmering water just until cooked through (165ºF). Cool, then chop the meat and place 1-1/2- or 2-cup portions in separate freezer-weight resealable plastic bags. Label each bag, then freeze up to 3 months. Use as desired in your favorite casserole and salad recipes.
