HEAT oven to 200ºF.
MIX baking mix, water and sour cream in medium bowl just until blended. Stir in apples and cinnamon.
HEAT 2 Tbsp. oil in large nonstick skillet on medium heat. Add 1/4 cup batter to skillet; repeat 3 times to make a total of 4 fritters. Flatten each to 4-inch round with back of spatula; cook 2 min. on each side or until golden brown on both sides. Transfer to ovenproof plate; place in oven to keep warm until ready to serve. Repeat with remaining oil and batter.
SIFT sugar over warm fritters. Serve warm or at room temperature.
