  • Preheat oven to 375°F. Spray large skillet with cooking spray. Add onion and red pepper; cook and stir on medium-high heat 5 min. or until softened. Stir in spinach; set aside.
  • Prepare stuffing mix as directed on package; stir in onion mixture and parsley. Beat eggs; mix with stuffing mixture. Pour into greased 8-inch square baking pan. Sprinkle with cheese.
  • Bake 35 min. or until firm. Cool 15 min. Cut into strips or squares. Serve warm or at room temperature.

Substitute

Substitute 3 cups chopped asparagus for spinach.

I didn't have red bell (surprisingly), and with the spinach (e-coli) scare recently, I decided to do it a little differently and it was a smash! My husband (being from Louisiana) likes dishes with red pepper, but he LOVED THIS! Thank you so much! Even my 12 yr old loved it and she is picky! I subbed cornbread stove top for chicken as well as hamburger instead of spinach. We plan to do it again with italian sausage instead of burger.

Rated 5 out of 5 by from So excited to find this recipe! So excited to find this recipe! Will be perfect for a vegetarian potluck this weekend. Will probably use an herb seasoned stuffing mix instead of chicken, and will add a vegan chicken seasoning for additional flavor. Will have to quadruple the recipe for the quantity needed, but can't wait to make this! Every recipe I've made from this site has turned out great!

Wanted to make a quick one dish supper meal so I added a small cooked shredded cooked breast. I will add salt and pepper to the onion, pepper, and spinach mixture next time before adding to the rest. Made in May 2005 sos I made a fresh garden salad using a variety of lettuces and radishes from the garden.

However, it took me longer than 15 minutes to prepare the ingredients. Also, my husband and I agreed that the strata would make a better side dish than entree. I'm planning to serve the leftovers with ham steaks tonight.

Rated 1 out of 5 by from I really wanted to like this one, but the flavor didn't do it for me. I really wanted to like this one, but the flavor didn't do it for me. I added some fresh, chopped mushrooms, but still couldn't seem to taste much but the stove top stuffing. Any substitutions for that would be appreciated, as I would like to make this again. I normally love stratas.

I've made this twice, once just like the recipe and the second using basil pesto and Kraft's 5-Italian Shredded Cheese. It was excellent both ways. It's easy to make, presents well on the table and tastes delicious. It is a keeper in my file for brunches!

You could add something like bacon, chicken hamburger etc. if you wanted more flavor. But if you only have the ingredients on the recipe I think it was still good. I will make it again.

Rated 4 out of 5 by from My husband didn't like it, but I did. My husband didn't like it, but I did. I substituted green pepper and dry parsley flakes because it was what I had on hand. I also mixed some mozzarella into the batter. I liked it because I could eat a square on the run for breakfast.
