  • Heat oil in large nonstick skillet on medium-high heat. Add mushrooms and onions; cook 5 min., stirring occasionally. Stir in tomatoes, dressing and tomato paste.
  • Add chicken; cover. Simmer on medium-low heat 12 min. or until chicken is done (165°F).
  • Top with cheese and bacon; simmer, uncovered, 5 min. or until cheese is melted.

Special Extra

Serve with hot cooked rice or orzo.

Note

This dish also tastes great when served as leftovers. Just reheat in the microwave before enjoying as part of your lunch or dinner the next day.

Substitute

Contrary to my username (which I chose in middle school), I am nothing near a star cook, or even a decent cook for that matter. With that said, this was probably the first thing I ever made that came out AMAZING!!! It was super easy and DELICIOUS! I didn't have mushroom or tomato paste, so I substituted Chunky Mushroom Spaghetti Sauce for that. I subbed diced tomatoes with chilies for the tomatoes, so that added a little kick to it. And I used Parmesan cheese instead of Mozzarella. I probably mess up all the time because of all my substitutions, but it worked this time!!! I served it over rice and it was absolutely delicious! Tasted like someone else's cooking! :)

I made some changes that i think made the chicken more flavorful: i added 1 tbsp sugar to cut the acidity of the sauce from all the tomatoes and the paste, i sliced the chicken thin (or pound them to make them about 1/2 inch thin so they absorb more flavor and cook in less time), i added more bacon strips (about 7 or 8 instead of just two) and i also sprinkled some grated cheddar cheese on top allong with the shredded mozzarella. YUMMMY!!!

Have made this in large quantities in the oven by preparing the tomato mixture on the stovetop, while brasing the chicken breast at the same time, transfering the chicken to a baking pan, pour the sauce over the chicken, put in the oven at 325 for approx 30 minutes, sprinkle the bacon and cheese over the top, return to oven for another 5 minutes then serve over brown rice. Only takes about 10 extra minutes than the standard 4 serving recipe. My family loves this, we make it at least twice a month.

Rated 5 out of 5 by from Indeed, this recipe was delicious. Indeed, this recipe was delicious. However, I did change things around a bit. First of all, my boyfriend does not take kindly to mushrooms and onions so I ruled those ingredients out and instead replaced them with minced garlic (3 cloves) and it turned out to be so much better than I thought! Then, after cooking the diced tomatoes and the chicken together, I cut up some potatoes and threw them in as well! It came out much better than I ever could have suspected. Thanks again, Kraft.

I cooked regular bacon slices instead of ready-to-eat, and used the drippings from that instead of the recommended oil to saute the vegetables. I also added minced garlic to the saute, and chopped fresh rosemary into the sauce along with a little salt and cracked black pepper to taste. Served everything with a green salad and warm french bread to soak up all that sauce! It was quite tasty, and I'll make it again. Thanks!

The flavor and ease of this recipe is good but I agree with the synopsis that it's a very saucy dish. Definitely serve it over rice or pasta. We had a ton of sauce left over after we ate the chicken. I added peppers and olives and it was really good. I'll leave out the bacon in the future because you can't really taste it and it seems like a waste of calories. I also used olive oil Pam instead of olive oil to cut down on the calories. I'll make it again for sure.

My 13 year old was the one that made it since she wants to be a chef and it came out great. We made it with white rice but i think over pasta would be great. My kids love more rice than pasta (we are Hispanics) so she wanted to make it with white rice. We did add 2 cloves of garlic and made the dressing 1/2 cup instead. Used bacon bits instead and more than what the recipe says but it's just a personal touch.

I've made this recipe twice already.I pounded my chicken and used diced tomatoes, fresh garlic,bell pepper and crushed red pepper.After I put the chicken in the skillet, I just cooked it for 5 minutes and baked it until it was cooked. I did not use cheese or bacon. I don't eat dairy or pork. My husband and 2 year old devoured it without mercy. Thank you so much for the inspiration.I even sent it to my mother and she has been cooking for over 40 years now.
