Easy Cheesy Soup with Beer recipe

Sharp cheddar and beer flavor this creamy soup that is on the table in less than 30 minutes. Serve it with sandwiches for a cool-weather supper.

What You Need

 carrot, shredded

cup chopped onions
1/4
cup butter or margarine
1/4
cup flour
2-1/2
cups milk
2
cups shredded CRACKER BARREL Sharp Cheddar Cheese
1/2
cup beer
1/8
tsp. each Salt and pepper

Make It

COOK vegetables in butter in large saucepan on medium heat 5 min. or until tender, stirring frequently. Add flour; mix well. Gradually add milk, stirring until well blended. Cook 3 to 5 min. or until thickened, stirring constantly.

ADD cheese; cook on low heat 1 to 2 min. until melted, stirring frequently. Stir in beer.

COOK until heated through. (Do not boil.) Stir in salt and pepper.

Substitute KRAFT Sharp Cheddar Cheese for the CRACKER BARREL Cheese. Or, for a quick and easy alternative, use KRAFT Shredded Sharp Cheddar Cheese.
