  • Cook vegetables in butter in large saucepan on medium heat 5 min. or until tender, stirring frequently. Add flour; mix well. Gradually add milk, stirring until well blended. Cook 3 to 5 min. or until thickened, stirring constantly.
  • Add cheese; cook on low heat 1 to 2 min. until melted, stirring frequently. Stir in beer.
  • Cook until heated through. (Do not boil.) Stir in salt and pepper.

Substitute

Substitute KRAFT Sharp Cheddar Cheese for the CRACKER BARREL Cheese. Or, for a quick and easy alternative, use KRAFT Shredded Sharp Cheddar Cheese.

Rated 5 out of 5 by from I have made this a few times now and my boyfriend absolutely loves it! I have made this a few times now and my boyfriend absolutely loves it! The second time I made it I used more than a 1/2 cup of beer (more like 1/2 - 3/4 of a bottle of Killians) it was even better with the amount of beer increased. I have also added cooked pasta to it just before serving, very tasty! I want to try making this again soon with Guinness rather than Killians.

The first time I made this recipe, I felt something was missing something, that it was too bland. I found some bacon, cooked 4 strips, then crumbled them and added them to the pot. It turned out great! My brother and I finished the entire pot! I also add more beer than the recipe calls for now, as it gives it even more flavor.

I myself am not a fan of beer and I didn't like the end result with beer but my husband loved it. Without the beer it was also superb.
