  • Preheat oven to 350°F. Beat eggs lightly in large bowl. Add all remaining ingredients except the red peppers; mix well.
  • Pour into greased 9-inch pie plate.
  • Bake 40 minutes or until center is set. Top with peppers.

Variation

Mix ingredients as directed; pour into greased 13x9-inch baking dish. Bake at 350°F for 30 minutes or until center is set. Cut into squares.

Rated 5 out of 5 by from It is really yummy! It is really yummy! This tastes just like Quiche Lorraine, but without the crust...which makes this South Beach diet friendly. Instead of the bacon bits, I cooked six strips of turkey bacon and chopped it up. And, instead of the cup of mozzarella, I used swiss cheese because it was what I had on hand.

Rated 5 out of 5 by from This was so easy and delicious. This was so easy and delicious. I was a little afraid of using the cottage cheese, but once it was baked you didn't know it was there. I added a couple of dashes of cayenne pepper and salt, then topped it with 1 cup of the mozerella cheese. I will definitely use this again for a brunch dish.

I added a can of mushrooms to make it a little more substantial. My guests raved about it and even wanted the recipe.

My husband liked it though, and it would be good for a healthy breakfast.

I substituted Jimmy Dean Hot Sausage for the bacon and used Mexican Blend for the cheese and also added feta cheese on top and it was fantastic! This is my new favorite breakfast casserole!
