  • Heat 1 Tbsp. oil in large nonstick skillet on medium heat. Add half the chicken; cook 5 to 6 min. or until done, stirring frequently. Remove chicken from skillet; cover to keep warm. Repeat with remaining oil and chicken, adding second batch of cooked chicken to first batch of cooked chicken.
  • Add macaroni, water, milk and butter to skillet; stir. Cook 8 to 10 min. or until macaroni is tender, stirring frequently.
  • Add cheese; stir until melted. Add tomatoes and seasonings; cook 2 min. or until heated through, stirring frequently. Return chicken to skillet; stir to evenly cover chicken with tomato mixture. Cook 1 to 2 min. or until heated through, stirring frequently.

Serving Suggestion

Serve with a steamed green vegetable, such as broccoli, and glass of fat-free milk.

Shortcut

Omit oil, chicken, macaroni, water, milk and butter. Prepare 1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner in large skillet as directed on package. Add tomatoes, oregano and crushed red pepper; mix well. Add 2 cups shredded rotisserie chicken; cook until heated through, stirring occasionally. Makes 4 servings.

Special Extra

For a touch of heat, add chopped fresh jalapeño peppers to the macaroni mixture along with the tomatoes and seasonings.

I halved the recipe since I only had 2 chicken breasts in the freezer. I used half of all the ingredients, with the exception of the milk, I used a little more than 1/2 C. I cut the chicken into pieces and marinated it in a bacon ranch dressing. I then browned, adding seasonings (Penzeys 4S salt, onion powder, mural of flavor) while cooking. Once the noodles were done, I used 1C of medium cheddar, 1/4 C of havarti and about 3Tb of cream cheese. Delicious! Who says dinner needs to be boring!?

This isn't gourmet by any stretch but if you are looking for a cost effective, quick meal this is definitely it! It was delicious and soooo easy. The tomatoes really round out the flavor but I might add diced next time instead of stewed. I cut my chicken into little pieces and marinated them in Kraft Light 3 cheese ranch before I cooked them. I added an extra cup of pasta and an extra cup of cheese. Comfort food!

Based on the previous review I used diced tomatoes and cut the chicken into bite size pieces (great recommendation). It was tasty for a quick meal (not fancy). The red pepper and tomato gave it a nice flavor. Next time I will use a little minced garlic while grilling the chicken.

I used home canned tomatoes which might have been part of the problem, but made for great flavor. I added garlic pepper when cooking the chicken and would cut the chicken into bite-size pieces next time.

I did add a bit more crushed red pepper and mixed fat free cheddar cheese with colby jack cheese. Served with asparagus. Will definitely be making this again!!
