  • Whisk first 3 ingredients in 13x9-inch baking dish until blended. Gradually stir in milk.
  • Add chicken, rice, broccoli and 1 cup cheese; mix well. Cover.
  • Bake 30 min.; stir. Top with remaining cheese; bake 5 to 10 min. or until chicken is done. Let stand 5 min. or until liquid is absorbed.

I too questioned whether to cook the chicken first, but didn't because the recipe didn't call for it. I cut my chicken in nice small cubes and I thought it tasted great when finished. I used fresh broccoli, fresh cauliflower, and cubed potatoes to make it more appealing to my husband. I baked it longer because of the potatoes, which still didn't get cooked. Besides that I wouldn't have backed it anymore than 40 min. It could use slightly more milk with the mayo. Overall I really enjoyed it.

I decided to try it out anyway. It came out delicious! I think the complaints of hard rice are because brown rice is a little hard no matter how long you cook it. I used white rice, it was nice and soft. I also did not cook the chicken before, so I had to put it back in for the 10 min. after I added the last bit of cheese. I will make this again, the whole family liked it.

Here goes: Used 1 cup of wild rice mix and made in chix broth. Pour in pan, cut chix into small cubes and sauteed, place over cooked rice. Cooked broccoli for about 4 min and placed on top of rice and chix. Put milk and mayo into pan I cooked chicken in and heated, stirring constantly with a whisk. Poured over all other ingredients. Then baked. This was awesome!

To avoid crunchy rice, I cooked the rice ahead of time and added less milk to the recipe. 2 1/2 C cooked rice 1 C milk instead of 2 C Also, I thought it needed more seasoning (ie salt and pepper).Plus I had to adjust the cooking time to 45 mins covered to cook chicken through, and 7 mins with more cheese uncovered. It was well received by family and guests. This is easy and will be a go to recipe in the future.

I covered the dish, also stirred it a few times during baking or the rice would not of been done. It did need some more flavor. Maybe a small amount of white wine to complement the flavor of the cheese. Some mustard to give it the zip it lacked. I doubt i would waste the ingredients again to make this dish. Very disappointed :(

Rated 4 out of 5 by from I make this alot, it's quick and easy and we really like it. I make this alot, it's quick and easy and we really like it. To cut down on cook time I cook the brown rice in the microwave, boil or ssaute the chicken breasts first, then throw it together and cook about 35 minutes. It can be it little on the bland side though so I do tend add different seasonings each time, and generally I top with quite a bit of cheese. I think bread crumbs might be a nice addition also.

I followed the recipes directions but it did not turn out good. I think that a can of crm of mush or crm chk soup would have worked much better than milk and mayo. The consistency of the sauce was gross. Did not taste good at all. I had to throw most of it out. If you do try this recipe use some crm of mush & leave out the mayo. yuk

Wow, this wasn't the best recipe I've ever had, but it was easy and quick and was very good. I'm surprised that there were so many different results from the same set of instructions!! I followed instructions exactly (did not cover casserole) and everything was cooked through in 30 minutes and the rice was not crunchy at all. It was flavorful and my husband and I liked it fine. Would make again
