Add vegetables to a large pan of boiling water. Cook, uncovered, 2 to 3 min. or until crisp-tender. Drain, then immediately plunge the vegetables into a bowl of ice water to stop the cooking process. When completely cool, drain vegetables then pat dry. Trim root ends from onions; slip peels off by squeezing gently from the root ends until the onions pop out from the peels. Discard peels. For an easier option, substitute drained thawed frozen snow peas for the fresh snow peas, and drained thawed frozen pearl onions for the fresh pearl onions. No onion peeling needed!
