  • Melt 2 Tbsp. of the butter in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove from skillet; cover to keep warm.
  • Add water, vegetables and remaining 2 Tbsp. butter to skillet; bring to boil.
  • Stir in stuffing mix just until moistened. Top with chicken; cover. Reduce heat to low; cook 5 minutes or until heated through.

Substitute

Substitute 3 cups chopped fresh vegetables and add to skillet with stuffing mix.

Healthy Living

Save 4g of fat by preparing with less butter. Decrease butter to 2 Tbsp.

This is a quick an easy recipe, I found it on the box of Stuff and Such, it was very tasty, all four of my children liked it. However, make sure the chicken is cooked first, before it is put in the casserole, as the baking time may take longer if the chicken is not cooked first, and the extra cooking time, can dry out the casserole.
