  • Heat oven to 325°F.
  • Mix peanut butter, sugar and egg until blended. Refrigerate 30 min.
  • Roll peanut butter mixture into 18 balls. Place, 3 inches apart, on baking sheets. Flatten each ball, in crisscross pattern, with fork.
  • Bake 18 to 20 min. or until lightly browned. Cool on baking sheets 5 min. Remove to wire racks; cool completely.
  • Cover baking sheet with parchment or waxed paper. Melt chocolate as directed on package. Partially dip cookies in chocolate; gently shake off excess chocolate. Dip cookies in nuts; place on prepared baking sheet. Refrigerate until chocolate is firm.

Rated 5 out of 5 by from Everyone loved these so much that I had to bake more! Everyone loved these so much that I had to bake more!!! So so so easy and delicious ! Just make sure you chill them long enough and don't over bake. All ovens are different, mine took less than 10mins. You really only need to put chocolate on one side, it's plenty. You can melt chocolate chips instead of squares and use sprinkles instead of nuts. It's hard to believe you can make cookies without any flour! The best peanut butter cookie I ever tasted!!!

Rated 5 out of 5 by from The best PB cookies I've every had! The best PB cookies I've every had! I made this recipe twice now. I only put chocolate on one side - that was plenty. Huuuuge hit with everyone in the family. My husband loves these especiallly because they are soft when and not crunchy like most PB cookies made with flour. It is crazy to me that you can make cookies without flour, but it worked!

Very light & satisfying cookie. Given that it is so easy to make & I usually have the ingredients on hand, I will probably make these again for a quick sweet treat.
