  • Beat pudding mix and 1-3/4 cups milk in large bowl with whisk 2 min. Stir in COOL WHIP. Layer about 1/3 of the grahams and half the COOL WHIP mixture in 13x9-inch pan, breaking grahams as necessary to fit; repeat layers. Top with remaining grahams.
  • Microwave chocolate and butter in medium microwaveable bowl on HIGH 1-1/2 min., stirring after 1 min. Stir until chocolate is completely melted. Add sugar and remaining milk; stir until well blended. Immediately spread over grahams.
  • Refrigerate 4 hours.

Latte Eclair Squares

Prepare as directed, substituting 3/4 cup chilled brewed strong MAXWELL HOUSE Coffee for 3/4 cup of the milk used to prepare the pudding.

Variation

Prepare as directed, using fat-free milk, JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding, COOL WHIP LITE Whipped Topping and low-fat graham crackers.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

Rated 5 out of 5 by from I substituted 1 can of Sweetened Condensed milk in place of 1 cup of milk. I substituted 1 can of Sweetened Condensed milk in place of 1 cup of milk. Tasted more eclair-like. Absolutely delicious and easy to make. I made it even easier by using prepared frosting in a tub (*************, for example). Stays soft enough to cut and is still delicious.

I have done all sorts of variations with it, mostly experimenting with the pudding flavors. So far, the best flavors for pudding we have found are banana and cheesecake (banana being the favorite for kids and cheesecake the favorite for adults. Go figure.) OH! We just recently tried it with chocolate graham crackers, chocolate coolwhip and chocolate pudding and for a twist, we did white chocolate frosting. To DIE for!

The first time I made this it seemed a little thin so I increased some of the portions. I use 1 pkg. 6-serving size pudding with 2- 2 1/2 cups milk, same amount of cool whip and use enough graham crackers to cover all the layers. This way the layers are fuller. Also I add more powered sugar to the chocolate to stretch it so it covers the top better. This works well if I need to make two small 8x8 dishes. Keep one in the refrigerator for the late arriving guests.

Also, make a double batch b/c you will eat half of it with the graham crackers before it even hits the pan. Also, make the layer of chocolate very very thin-I made a double dose of that thinking it would be better, but it was too rich. My friend suggested just making the filling and putting it in a bowl with the crackers around it like a dip. YUMMY!

Didn't know she got it from Kraft, but we love it! We make it with French Vanilla Instand pudding for added richness. Just tried substituting middle layer of graham crackers with chocolate graham crackers for a change. Nice difference! I recmommed it for an easy desert to bring to someones house. I make it in rectanglar disposable plastic containers and don't have to worry about traveling, serving, or storing. The longer it sits in the fridge, the better it gets!

Rated 5 out of 5 by from Grandkid favorite This was so much fun to make and eat.....and sssooo easy and fast. It is a great recipe to make in the summer...no baking and cool to eat. My granddaughters were eating the 'cream' and icing as we made it....still they had so much fun completing the recipe and we did have enough for the final product. All of the family enjoyed it. Plus, much feedback that the leftover was even better! Evidently this is like lasagna....the ingredients meld together over time, enhancing the flavor.

Rated 5 out of 5 by from This is one of the best dessert recipes! This is one of the best dessert recipes! I always make this & take it to gatherings and everyone LOVES it!! Best of all, it's super easy to make, not too sweet and not too heavy of a dessert. Great for summer cookouts. I've even made this a bit guilt-free by using sugar-free pudding mix, skim milk, low fat graham crackers and fat free cool whip and it's still wonderful. I would recommend everyone to try this recipe.

I used white chocolate pudding since that is what I had on hand and my daughter doesn't like vanilla...but otherwise I followed the recipe. Great after 3 hours in the fridge even better after it sat over night! We ate it without silverware, just picked it up with a napkin. YUM!
