What You Need

large cucumbers

radishes, thinly sliced

1/2

cup ATHENOS Crumbled Feta Cheese with Basil & Tomato

1/3

cup KRAFT Zesty Italian Dressing

1/3

cup pitted kalamata olives

1/4

cup chopped red onions

Make It

USE vegetable peeler to cut 1 cucumber into long thin ribbons.

PEEL remaining cucumbers; cut into 1-inch cubes. Toss with remaining ingredients.

SPOON cucumber mixture onto center of platter; surround with cucumber ribbons.

The cucumber slices looked very pretty, but I preferred eating it chopped. I made it for my husband and I and we had some leftover. The ribbons of cucumber didn't hold up as well the next day.

Don't bother peeling 1 cucumber with vegetable peeler, just cut like rest of cucumbers. Not quite as good the next day, but yummy used as a topping for a salad.

LOVED THIS!!! I've made this several times and I will say that it tastes better after it has 'sat' for a couple of hours. Its also a stunning dish when the cucumbers are cut into thin strips. I've also added other veges that I had on hand (carrots, celery, green peppers, etc.)

This was a wonderful and easy way to make a quick cucumber salad. Everyone at the 4th of July picnic loved it. It was so pretty too! I'm not a big fan of a cucumber salad that is too vinegary so this was perfect for me!

I have made this salad MANY times. I have made ot to take to partys,and for family dinners. Everyone who has it says it is wonderful

I've made this recipe several times in the summer. It's a very refreshing salad when the weather is warm. My children love cucumbers so even they will eat this!
