  • Heat oven to 400ºF.
  • Combine rice, peppers, water, barbecue sauce and 2/3 cup salsa. Spoon about 1 cup rice mixture onto center of each of 4 large sheets heavy-duty foil sprayed with cooking spray; top with remaining ingredients. Drizzle with remaining salsa.
  • Fold foil to make 4 packets; place in single layer on baking sheet.
  • Bake 20 min. or until chicken is done. Cut slits in foil to release steam before carefully opening packets.
