This is always a hit at our house-- this salad or a variation of it is a summer staple. Perfect with anything from the grill. Often we omit the cheese and green pepper (depends on what we have on hand). Tastes better when allowed to marinate a few hours and keeps well (a day or two in the frig if it lasts that long-- great as a leftover the next day for lunch!) Experiment with different vinegars for variety. We like balsamic and seasoned rice vinegar (slightly sweet), also red wine vinegar is good. You may want to add a bit of sugar to balance the acid level, depending on your preferences and the vinegar you select.

Rated 4 out of 5 by from What a handy recipe this was. What a handy recipe this was. I came home late one night and whipped this together in little time. We were at the park all day for a softball tournament and this made for a refreshing lunch. We made 2 adjustments – I added green onions as my kids hate red onions and I put the salad into a pita pocket to make it easier to eat at the park. It was a hit with the kids and they wanted more. It is a wonderful salad to take on the go and it kept well in the cooler.

I have added black olives and chick peas to the recipe, as well as used different color bell peppers. Its also great with the Kraft Mediterranean crumbled cheese or the Mozzarella crumbles too. I have served this salad over spinach leaves and topped with diced grilled chicken or shrimp for a great lunch.

Rated 5 out of 5 by from This was so delicious. This was so delicious. I made it for a party & received many compliments on this salad. I bought the Feta in chunk form & sprinkled just before serving & put the left over feta on the side. This salad was the first to go. I have since been addicted to this salad & just Greek Salad in general. Add Romaine lettuce & there you go. Awesome & Great dressing!!

Rated 4 out of 5 by from I made this recipe for my daughter's birthday party and it was a hit. I made this recipe for my daughter's birthday party and it was a hit. The only thing that I did was to add a little red pepper too because I had one available. I also used a different dressing because I had a homeade vinagerette one on hand. But if I make it again I will probably use the one recommended in the recipe.

Rated 5 out of 5 by from This recipe was quite delicious. This recipe was quite delicious. I have an abundance of cherry tomatoes and cucumbers from my garden this year and this is a fabulous recipe to use them on. The only change I made was substituting cherry tomatoes and a red bell pepper. The lemon in it is great! Three people have already asked for the recipe.

Tried this in my restaurant as one of our deli salads for the week (that was 2 months ago), but made a few minor changes, I used cherry tomatoes, cut in half and added some sliced black olives. Everyone one loved this so much, it is now in our deli case everyday and it is a daily sell out!

I've been eating a variation of this salad all my life (70) and my only question is "where are the greek olives?". My only suggestion would be, leave out the greek dressing and use really good olive oil and a fresh squeezed lemon. The lemon gives it a "bright" flavor and can't be beat.
