My family does not generally like these type dishes, so I changed the ingredients to things they like and for the first time in many years the entire family ate the same thing. I used a 13x9 greased pan, lined it with chicken, covered it with a 16 oz bag frozen broccoli cuts (cooked in microwave 1 1/2 minutes), layered one sleeve of crushed wheat crackers, then mixed together the 6 eggs with 2 1/2 cups 1% milk and about 1 cup 4 cheese blend (montery jack, cheddar, queso quesadilla & asadero) shredded cheese and a box of Near East Rice Pilaf (with seasoning packet), poured that on top and covered with lots more shredded cheese. Cooked 350 for about an hour. It was fabulous. Thanks for the basic idea!! It was soooo easy and quick for a weeknight supper!!!

I added asparagus since I didn't have broccoli and added a can of mushrooms and a few minced onions. Also added pepper and a shake of Montreal Seasoning. Added Italian cheese mix since no mozzarella was in my refrig/freezer. It took 45-50 mins to have all eggs cooked through. Very good, husband enjoyed it, had it on a Sunday night, looking forward to it for breakfast tomorrow.

To reduce the fat and calories I used extra lean low fat ham, fat-free milk, reduced fat wheat crackers, egg substitute, low-fat cheese, and then reduced the egg & milk quantity with adding low-fat broccoli & cheese soup to keep it thick. I also added a little black pepper and garlic. Very yummy!!!

I bought Reduced Fat French Onion Wheat Thins by mistake, so I tried them and I think it actually was a better choice. It would have been a little bland without the extra flavor. It was a great way to use leftover ham!

Even if it was excellent, I would not make it for my family because of the high fat and sodium count. Thank you to Chuck for bringing that to our attention. The question is, could it be made in a much lower version?

The flavor of the crackers does not compliment the dish. Next time I make it I will leave the crackers out, reduce or maybe remove the milk and cook the broccoli first.
