I added asparagus since I didn't have broccoli and added a can of mushrooms and a few minced onions. Also added pepper and a
shake of Montreal Seasoning. Added Italian cheese mix since no mozzarella was in my refrig/freezer. It took 45-50 mins to have all eggs cooked through. Very good, husband enjoyed it, had it on a Sunday night, looking forward to it for breakfast tomorrow.
I liked this dish, but my husband loved it. Seems more like a breakfast dish than dinner though.
