  • Heat oven to 350°F.
  • Whisk eggs and water in medium bowl until blended. Stir in ham, 1/2 cup cheese and 2 Tbsp. cilantro.
  • Pour into 9-inch pie plate sprayed with cooking spray; top with remaining cheese.
  • Bake 30 min. or until top is puffed and golden brown. Sprinkle with remaining cilantro.

When I make my fritatta's I add softened cream cheese and beat it in with my eggs... keeps it SUPER light and fluffy and moist. These Frittata's also freeze BEAUTIFULLY! I make TONS in advance, and freeze them into portions and hubby and I eat them nearly every day for breakfast. You can change you meats by using bacon, ham, sausage, add different veggies like broccoli, asparagus, spinach, green/red/yellow peppers, you can also add salsa and you can also make it totally vegetarian. So we never get tired of Frittata's! Yum!

Also I liked this recipe because it is the kind that you can unleash your imagination on. As I was enjoying eating the frittata, I was already thinking of all kinds of combinations that could be used in this dish. I know that this is going to be one of my used over and over againg recipes.

We all looked back into our childhood as we ate it. It reminded us all of when we were all growing up and my mother would make a Frittata similar to your recipe for us. Your recipe is fantastic and even tops the one my mother made. From now on I'll use your recipe and so will the others. Gloria

I have also changed out the meats and cheeses with other combinations - Oscar Mayer Real Bacon bits with cheddar cheese and cooked and crumbled sausage with pepper jack cheese. Have used all kinds of vegetables - chopped broccoli, chopped tomatoes, chopped green or red peppers. This recipe is easy to get creative with.

I actually used Egg Beaters instead of eggs and added about 6 oz of ham instead of 4 oz. This was a delicious, EASY recipe. Served it with fruit and english muffins ... a great dinner. (I did bake mine a bit longer than the recipe called for. Maybe because I used Egg Beaters it took longer to cook?)

Rated 5 out of 5 by from I've made this several times. I've made this several times. It is a great recipe to modify. The last time I made it, it omitted the ham. I used 5 whole eggs and 5 egg whites, 1.5 cups shredded mex. cheese. I added 2 tsp. hot sauce, 1/2 yellow pepper chopped, 2 roma tomatoes chopped, handful of chopped spinach, and 1/2 cup corn. Bake for 45 minutes, and it is GORGEOUS and DELICIOUS.

I have used thin sliced ham and even baked ham diced into small pieces. It is great with the crescent roll/cream cheese & honey recipe and a chilled glass of white wine. I have served it for dinner and lunch and it also makes great leftovers. Try it you will like it!!
