Easy Ice Cream Sandwiches

What You Need

cups vanilla ice cream, slightly softened

cup chopped PLANTERS COCKTAIL Peanuts, divided

CHIPS AHOY! Cookies

Make It

MIX ice cream and 1/2 cup nuts in airtight container. Freeze 20 to 30 min. or until firm enough to hold its shape.

SPOON about 2 Tbsp. ice cream mixture onto flat side of each of 15 cookies; cover each with second cookie, top-side up, to make sandwich.

ROLL edges in remaining nuts. Freeze 2 hours or until firm.

Wrap sandwiches individually in plastic wrap or foil; place in freezer-weight resealable plastic bag. Freeze up to 2 weeks.

Easy Ice Cream Sandwich Minis

For bite-size sandwiches, prepare as directed using Mini CHIPS AHOY! Cookies and filling each cookie sandwich with 2 tsp. of the ice cream mixture. Makes 15 servings, 2 mini sandwiches each.

Special Extra

Roll edges in chopped BAKER'S Semi-Sweet Chocolate, chopped JET-PUFFED Miniature Marshmallows or chopped Mini OREO Bite Size Cookies.

My family loved these! I used reduced fat cookies and no sugar added, low-fat vanilla since I'm watching my weight. They were awesome, my husband ate like 3 in a row!

Kids loved it. I premade a dozen of them without the garnishings. During dessert, I put out different small bowls and let them mix and match there own. They loved doing it themselves.

I made them for a birthday party, served cake first and then passed out sandwiches when kids and adults were done. Not messy at all: wrap them Individually in clear wrap when you put them to freeze!

This recipe is so good. I made this week for my kids and every day they ask me to make it again. So by Fridat I shouls have this recipe memorized.
